Well, hello and happy Friday! I hope that y’all have had a good week! This week I’ve decided to do something a little different. Monday and Tuesday were a little rough but by Wednesday things were getting back to normal. And then there was yesterday. I wasn’t sure what to include in the blessings this week until last night when I realized just how blessed I am. So this week I want to tell you a little about my 23rd Birthday….
Normally I’m not a fan of getting older (and being reminded once more that the way I had envisioned my life is not my reality). And that’s pretty much how the week started…
But when I woke up on Thursday I decided that I was going to have a good day! And a good day it was!

I decided to take the majority of the day off work and really only work on a small project that’s due Saturday, it wasn’t even that long either. So, I took the day kind of slow simply because I could. Then by mid-afternoon I started on Dinner and Dessert. Like I said last week, we’re given the option to cook something or go out and I chose to make Chicken Parmesan and Pumpkin Cream Pie based on recipes from “The Pioneer Woman”.
I used her recipes as a guide and decided to make it my own, tweaking it a little here or there based on what we had on hand.
Once I filled the shell for my Pumpkin Cream Pie it looked like it needed a little something more. So I used the rest of the heavy cream, added some powered sugar and made homemade whipped cream in THE BLENDER. Normally homemade whipped cream is made in a mixer. Ours is so well loved, it’s just a matter of time before it dies. So I thought I’d try the blender. Ya’ll IT WORKED WONDERFULLY!! I even surprised myself!
Both recipes turned out really well. I would however recommend leaving the pie to cool in the fridge for at least 2 hours or over night (per instructions). It tasted delicious but was a little soft.
Billie Jo wrapped my presents and included a personal hand drawn design on each package…I loved each thing I opened but the one pictured below is my favorite. My Grandma started this tradition several years ago at Christmas when our gifts didn’t come in in time. She took a picture of what she ordered and wrapped it. Mom and JoJo took it one step further, not just wrapping what they ordered but turning it into a riddle. I’ll be receiving a Photography Light Kit hopefully sometime tomorrow. (:
Another really good thing about yesterday is that we were all home to celebrate my birthday on the actual day!!
I’m not sure how much longer that will last due to Bradley’s work and school schedule and this time next year JoJo will probably be working and going to school as well. So I made us three kids and Trinity get a photo just in case this is the last birthday where we are all together celebrating on the actual day!
I also received many sweet birthday texts, Facebook comments and cards from many dear family and friends! I am so thankful for this life that I get to live…even if it’s not how I envisioned… After the start that I had, it’s a miracle that I am sitting here writing this!
